Just wondering if there is a way I can d/l and play a server on my mac pc. If so would it be possible if someone could let me know

Yes, install Windows 8.1 in Virtual Box al play. You can also install Windows 10 but it consumes more resources.

you can also use parallels on your machine if needed

Best way is to use the BootCamp and install Windows. All drivers will automatically be installed .

Install Windows 10 using BootCamp, on your OS X install VMWare Fusion (free) and create a virtual machine using the existing BootCamp partition. Open virtual machine's settings and set more RAM for it (maybe more cores if the mac has more to spare :) ). Also don't forget to uncheck "Use full resolution for Retina display" under VM settings > Display or the game window will be like 5cm x 5cm (translated as 2" x 2") :D

I don't suppose anyone knows if the new ARM macs have an impact on playability?

The problem is not the game but the virtualization itself. They managed to virtualize Windows but it's a pain in the ass and some stuff is not really clear. You'll have to wait to see how things go.
